The brass parts contain an heat expanding substance, you will notice there are two brass parts, that was easer to understand than my previous posts

yeah it looks like theres two wax brass capsule inner rlements i think when the stat fits in the plastic manifold part, it also sits in a brass receptacle that is brass also probably to conduct heat effieciently... i just noticed this diagram not sure if its the same as z3 but i think they all work on similar principle... anyway i have put the old part back in for now, will top up the coolant tomorrow and see if it has made any difference... if not i will order a new stat...

i bought a new 1
36 including p&P works a treat do you want to chance refitting the old part
& it not working for 31 quid
change it i would & did

Mine behaved in exactly this way replaced the stat and it went back to normal.
My 99 shows in real oem to have a seperate stat but it is the all in one part with the electrical connections so cost £60 more !!
Looked ok but was causing the issue :thumbsup:
